Protein Pumpkin Muffins

PROTEIN PUMPKIN MUFFINS_picLooking for something to satisfy your cravings while enjoying your morning coffee? This quick and easy muffin recipe will definitely calm your sweet-tooth down without making you feel guilty afterwards.


INGREDIENTS

  • 2 Scoops of Cellucor Peanut Butter Marshmallow Whey
  • 2 cups oats
  • 15oz can pumpkin
  • 1 banana mashed
  • 1/2 cup egg whites
  • 1/2 cup almond milk + additional if needed
  • 1/4 tsp sea salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • 1 Tbsp Stevia or 1/4 cup honey
  • 1/4 cup Dark chocolate chunks

DIRECTIONS⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

  1. In one bowl Mix together oats/baking soda/salt/cinnamon/nutmeg
  2. In another bowl mash banana, add egg whites/ pumpkin/ milk/ stevia. Whisk until smooth
  3. Mix wet and dry ingredients
  4. Spoon mixture into muffin tin and add chocolate chunks on top
  5. Bake at 350 for 25 mins.
